Default Vietnamese foods.

Vietnamese foods
My father was station in South Vietnam from 1963 to 1966.
He use to say " Before it got nasty°
He learned to cook some of the local dishes.
One was beef and peppers over white rice.
Years later, he used another type of rice.
I can't remember what type of rice.
I still make this meal on my own.
Good food!

My favorite Vietnamese food is a nice, steaming bowl of pho. I like mine with meatballs, rare brisket, tendon, tripe, and LOTS of basil.

The “variety meats” are an acquired taste, I suppose.

I became biased, and have not had Vietnamese food since '68-69. I truly dislike Nuoc mam sauce in the way I've come upon it. The people are fine, just have something about the food. For some reason a Viet restaurant makes me uneasy. Go figure.

"Broken Rice"?? (com tam, i think)

Jasmine rice that has been crushed into finer pieces

If you have an H Mart in your area, they would surely have it.

My favorite Viet dish is Com Tom Thit Nuong. Which seems to be different at various restaurants. The one I liked, at Saigon Cafe in Atlanta, is chopped bbq caramelized pork on broken rice, drizzled with fish sauce, with what looks like pickled carrot. Other restaurants may use pulled pork, pork chop, or pork patty, and add a fried egg and or sprouts

Wichita Kansas is blessed with a substantial Vietnamese population so we have many good food places. I always asked my students were the best Pho is and they always say at their house. I love Pho and eat is twice a week at several different places. It is always interesting how no place is alike.

While I am a huge fan of Chinese and Thai food, I have unfortunately not found anything Vietnamese or Korean I can stand.
Not sure why on Vietnamese, but Korean is due to all the stinkin' cabbage/kimchee.
