Sounds like my old girlfriend in NJ and her grandma... She was an old part-Italian grandma and she boiled EVERYTHING as well...

One time her son, who was an oil executive down in Texas, brought a beautiful Gulf red fish up to her for her to enjoy... She took it into the kitchen and told everybody to sit down and visit, and she'd cook the fish for lunch. The son, being glad to see all the family and eager to visit, didn't give it a second thought and sat down and was soon engrossed in discussions... After awhile, he smelled something coming from the kitchen, and got up to see how the dinner was coming. To his great dismay, he found his mother happily boiling the fish away...

She basically didn't eat anything but boiled white fish and boiled white potatoes... I don't see how folks can stand to eat that stuff...

BOILING anything is a sure-fire way to destroy any/all flavor of just about anything.
Boiling ANY meat should be illegal.
The only thing I ever boil is a quick-boil of string beans before putting them in other dishes to be cooked.
Boiled potatoes are flavorless digusting masses of starch...throw 'em right in the trash.

Many of the cooking 'ideas' from the 'old country' should have been left right there NEVER to resurface for anything but PUNITIVE PRISON FARE.

Well, in all fairness, it's kinda hard to make chili or stew without boiling meat (and potatoes in the case of stew).

Other than that, I'm with you on not boiling stuff GH...

For stew, the potatoes cook in the 'crock pot' with the other veggies and meat, they are NOT boiled prior.
The meat gets quickly browned in a frying pan with a little oil.

For chili, WHY would one boil ground meat ? I usually mix beef ground round and ground Elk meat 50/50. It then gets browned in a frying pan before mixing it in with all the other chili fixin's in the crock pot.
When I brown the meat, I mix some Lea&Perrins Worchestershire sauce in the frying pan.
Yes, I ALWAYS use beans in my chili as well (four varieties; black, pinto, Dark Red Kidney, and light red kidney beans)
Diced pickled jalapeno peppers, cumin, Arbol Chili Powder, Regular Chili Powder, Montreal Steak Seasoning, red & Green Bell peppers, several dashes Tabasco Habanero pepper sauce for seasoning.
Two large cans of Hunt's Tomato Sauce for base.
Sometimes I mix in some Chorizo sausage as well.
Zero whole/crushed or any other canned tomatoes.
No Onion felgercarb gets put in it either; onions are AWFUL !

My chili is very thick; I usually top with 'taco seasoned' cheese, chives, and a dollop of Sour Cream.
Never found a need for anything boiled in it though....

How did a thread on corned beef and cabbage end up with a chili recipe?

Back to original topic, I'm having my New England boiled dinner tonight on St. Patrick's Day.

Corned beef, cabbage, potatoes, carrots and onions.

As I type this my Corned Beef coming up to it's first boil. Two more of those and off it goes to simmer for 2½-3 kours.

Try that recipe with Kielbasa (Polish Sausage). Once my parents were starting to prepare that when they discovered that they were out of corned beef, but they did have some Kielbasa in the freezer, and my father decided to try it instead. It was so good that we had it regularly afterward.
