Today, while I was up north, I would see the steel buckets attach to a Maple tree. The buckets have steel covers to keep out bugs and debris. Also, there are blue tubes strung to several trees and a five or ten gallon bucket to catch the sap. A new one for me is blue square catch buckets attached to the trees. Cool. The season is nearly over here in southern WI. I put taps in February 26, the last measurable sap collected was a week ago. Some freezing nights are coming this week, though in the past, after such an extended warm stretch, not much sap flows. At this point, it's been a below average year, at about 10 gallons of sap per tap. It's as tasty as ever, though.

I was in WI 3 weeks ago and I stopped at Hurstads sugarbush in Cumberland. I picked up some syrup, maple candy, maple cotton candy, and maple carmelcorn. The reduction for syrup is 50:1 so the reduction for the candy blocks must be VERY high (I wish I’d asked what it was.)

I believe they did-but I didn't get any because I they're too sweet even for me. I guess I could have gotten a couple for "the Vixen" but I didn't because she has a weight problem......

We lost six trees in the Derecho storm last August and have one maple stump left out by the street (city is supposed to remove it).
Since February it has been constantly "wet" on the top. I could not figure out why until I realized that the sap is coming up from the roots underground. |

My ex father-in-law (RIP, a good man), had a small 3 foot evaporator. I helped out at his sugar shack. I was amazed at how much work is involved; tapping, gathering, pumping etc. Temperature depended on high pressure area, low pressure could effect how the evaporator worked getting the right temp to draw Grade A Fancy, A or even a good B. The lighter in the golden the better. Don't make the mistake of drinking more than a couple of mouthfuls of raw sap.
